These bat Halloween ice cream sandwiches are so cute, kids of all ages love them. They’re also super easy to make, and they can be made in advance, days before things get crazy on October 31st!

Things You Need for this Dessert
A bat-shaped cookie cutter is practically made for this recipe, but I also love that it’s super adaptable. You can use any cookie cutter for this treat, including shapes to make it work for other occasions or holidays!
Note that the bat cookie cutter is far wider than it is long, which makes it easy to cut the shape out of a single ice cream sandwich. You can use bigger cookie cutters that are too big for one ice cream treat, but it’s a bit more work.
Here’s how to do it using a bigger cookie cutter:
- Line a baking sheet with parchment paper.
- Unwrap 2 ice cream sandwiches and put them long sides together so there’s just a thin seam between them. If you need to, press down gently to make sure the ice cream from one touches the other.
- Cut out your shape and remove the excess ice cream sandwich from around it.
- Return your cut out shape to the freezer until it’s frozen into one piece.
Personally, I’d stick with the cookie cutter shapes you can use on a single ice cream sandwich, but don’t let that stop you!

Here’s what you’ll need to make these bats as shown in the pictures:
- A bat cookie cutter
- A sharp knife
- A bowl
- A cutting board
- A baking sheet
- Parchment paper
- Aluminum foil
Ingredients
Dessert Prep Work
You have a bit of prep work to do before you get started constructing your Halloween ice cream sandwiches.
First, make sure the ice cream sandwiches have been undistrubed in the freezer for at least two hours before starting this project. They won’t cut right if they’re not frozen solid.
Second, fill a small bowl (a cereal bowl is perfect) with cold water and put it near your cutting board.
Directions
- Line a baking sheet with parchment paper.
- Place a frozen ice cream sandwich on the cutting board. Dip the cookie cutter in the cold water, then press it firmly down into the ice cream sandwich.
- Use your knife to cut away the extra ice cream sandwich that’s outside of the cookie cutter, then use both thumbs to push the bat shape through the cookie cutter onto the prepared cookie sheet. Repeat with the rest of the ice cream.
- Cover the baking sheet with foil and put in the freezer for at least two hours.
- Just before serving, using the icing gel to attach two bat eyes to each sandwich. Squeeze two small lines of the gel icing to resemble fangs.
- Serve and enjoy!
