Birthday cake ice cream. My husband loves birthday cake ice cream. You know, the kind of ice cream with bits of moist cake and festive sprinkles mixed in? It's like a birthday party for your mouth!

I admit, I'm much more partial to a good cake batter ice cream than I am to birthday cake ice cream. Still, I can appreciate how fun and cute birthday cake ice cream is! It's especially good when it's topped with this Hershey's chocolate syrup recipe!

So I set out to find a birthday cake ice cream recipe, and I realized what I really wanted to make was a no-churn birthday cake ice cream recipe!

We weren't actually celebrating a birthday when I made this recipe, but it was close to the 4th of July. So I made birthday cake ice cream for America's birthday!

You know what that means? You can make birthday cake ice cream in any color combination for plenty of different occasions. It fits into plenty of different celebrations!

If you're making no-churn birthday cake ice cream for an actual birthday party, I recommend tinting your cake yellow, pink, green and/or blue. Use traditional multi-color sprinkles and your ice cream will be a happy, funfetti treat!

The other ingredients in this recipe include heavy whipping cream, sweetened condensed milk, vanilla extract and vanilla pudding mix.

Traditionally, birthday cake flavor is vanilla. The flavor of this birthday cake ice cream is a rich vanilla base with with white or vanilla cake mixed in.

Is birthday cake ice cream a cake?

No! It's ice cream. It has bits of cake in it, but it's not a cake.

Does birthday cake ice cream have frosting or icing in it?

This birthday cake ice cream recipe does not have frosting in it, and I think it's sweet enough without it. Do you really want frosting or icing in your birthday cake ice cream? Just frost your cupcakes with your favorite brand or recipe of frosting after they cool but before you crumble them. Then follow the rest of the recipe.

Do I need to use white cake for my birthday cake ice cream?

Yes and no! Yes if you want to make your ice cream with pretty colors of cake mixed in. If you don't you're free to use any flavor of cake you want. You could even use my snickerdoodle cupcakes recipe or chocolatey red velvet cupcakes recipe in there!

I actually have a pretty sweet ice cream maker that works well. The problem is that it's loud. fort 20-30 minutes. It's not deafening, but it's about as loud as mixer on high speed, and it. just. doesn't. stop.

In all honestly, my ice cream maker doesn't always bother me, but some days have me more on edge than others. This was one of those days. So I made the no-churn birthday cake ice cream to keep the volume down.

How to make homemade no-churn birthday cake ice cream

Making this homemade no-churn birthday cake ice cream has a few steps, but it's made easier by skipping the churning step of traditional ice cream recipes.

First, you need to prepare a cake mix, divide the batter it into three separate bowls. Leave one bowl as it is, then tint each other bowl a different color. I made these red and blue.

Scoop the batter into your muffin tins and cook them as cupcakes according to the instructions on the box.

Next you'll need to whip your heavy whipping cream into super fluffy whipped cream. It needs to be stiff peaks to support the chunks of cake that you're going to mix in.

Then you'll need to mix your sweetened condensed milk, vanilla pudding mix and vanilla extract in a separate bowl.

Take one or two of each color of cupcakes and cut or crumble them into bite-size chunks. Stir them in until the cake is coated with the vanilla mix, then in your coordinating sprinkles.

Your final step before freezing is to fold in your whipped cream just until it's all combined. Your whipped cream will lose the air you've whipped into it if you stir it too much, so don't over mix it.

You'll want to freeze your mix in a loaf pan for 24 hours, so be sure you plan to make your no-churn birthday cake ice cream at least a day before you need it!

No-churn birthday cake ice cream recipe

Birthday Cake Ice Cream ingredients:

  • 1 box white cake mix PLUS the ingredients to make it
  • 2 cups heavy whipping cream
  • 1 can sweetened condensed milk
  • 1 tablespoon vanilla extract
  • 1/3 cup vanilla pudding mix (about half of one box)
  • food coloring
  • Sprinkles

Birthday Cake Ice Cream Recipe instructions

  1. Make your cake mix according to the instructions on the package. Divide the prepared batter equally into 3 bowls. Tint one bowl one color and tint the second bowl a different color. Leave the third bowl white.
  2. Pour the batter into cupcake pans and bake according to directions. Set aside to cool.
  3. Pour the heavy whipping cream into a bowl and whip until it forms stiff peaks. Set aside.
  4. In a separate bowl, pour in one can sweetened condensed milk, vanilla extract and vanilla pudding. Mix well.
  5. Crumble one cupcake of each color into the vanilla mix and gently stir to mix. Pour sprinkles over the mixture, then gently fold in your whipped cream. Be careful and don't over mix.
  6. Pour about half the mixture into a metal loaf pan. Layer crumbled cupcakes on top, then pour the rest of the ice cream mix into the pan. Cover with more crumbled cupcakes and top with sprinkles.
  7. Cover your loaf pan with plastic wrap, then wrap it tightly with more plastic. Freeze for at least 24 hours.

Homemade birthday cake ice cream is a no-churn frozen dessert that combines all your favorite party treats into a deliciously creamy cake and sprinkles ice cream!

Ingredients

  • 1 box white cake mix PLUS the ingredients to make it
  • 2 cups heavy whipping cream
  • 1 can sweetened condensed milk
  • 1 tablespoon vanilla extract
  • 1/3 cup vanilla pudding mix (about half of one box)
  • food coloring
  • Sprinkles

Instructions

  1. Make your cake mix according to the instructions on the package. Divide the prepared batter equally into 3 bowls. Tint one bowl one color and tint the second bowl a different color. Leave the third bowl white.
