Rice Krispies cereal – I’m going to go against the grain and tell you that I don’t think the Kellogg’s brand product is necessary for this recipe. Aldi’s Crispy Rice cereal is just as good as the name brand, and most grocery stores have a generic version that’s identical or nearly the same as Rice Krispies.
Marshmallows – The most important thing about any marshmallows you use is that they’re fresh and fluffy. Don’t use them if they’re sticky or compressed in the package. For brands, I prefer using Jet-Puffed marshmallows, but any reliable brand of fresh ones will work.
Butter– Use unsalted butter if you can. Salted butter won’t ruin your pumpkin rice krispie treats, it just adds extra salt that’s not called for in this recipe.

- 3 tablespoons butter
- 4 cups mini marshmallows
- 6 cups Rice Krispies cereal
- ½ teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- ¼ cup canned pure pumpkin, drained
Pumpkin Pie Rice Krispie Treats directions:
- Grease a 9×13 pan with nonstick cooking spray.
- Melt the butter in a large saucepan over medium heat.
- Add in the mini marshmallows and stir. Continue stirring until the marshmallows are melted and combined with butter.
- Add in the canned pumpkin and spices. Whisk until smooth.
- Press the mixture into your prepared pan.
- Cool completely, then cut into squares.

Instructions

Added rice crispy after combining melted marshmallows and pumpkin. My rice crispies went soggy. Not sure how to change it so this doesn’t happen.

I think that you have to put pumpkin purée on paper towel to absorb liquid prior to adding to recipe. Maybe about 15 minutes or so.
